LAMB KEBABS

No better way to get into lamb than with this reliable kebab recipe.

Ingredients
1 1 KG - GROUND LAMB
2 1 TBSP - GROUND CUMIN
3 1/4 TSP - GROUND CINNAMON
4 1/4 CUP - MINT (CHOPPED)
5 1/4 CUP - PARSLEY (CHOPPED)
6 1/2 CUP - YOGURT
7 JUICE AND ZEST OF 1 LEMON
8 1 MEDIUM - ONION (CHOPPED)
9 4 SMALL - LOCAL TOMATOES (QUARTERED)
10 10 PCS - BARBECUE STICKS (SUBMERGED IN WATER)
11 TO TASTE - SALT & PEPPER
Steps
1 Preheat your grill to about 350°F.
2 In a bowl, combine your ground lamb, spices, herbs, lemon zest and salt and pepper. Combine well with your hands.
3 Evenly portion out the ground lamb mixture on each of the barbecue sticks.
4 Grill the lamb skewers about 4 minutes on each side, you may also grill the tomatoes and onions simultaneously.
5 In a small mixing bowl, combine yogurt, lemon juice and salt and pepper to taste.
6 Serve lamb kebabs and grilled vegetables on a dish with the yogurt dipping sauce on the side.
Tips
1 Can be served with your choice of Basmati rice or pita bread.
