CHIPOTLE STRIPLOIN ROAST

Ingredients
| 1 | 3 KG - AGED ANGUS STRIPLOIN SLAB, CHOICE GRADE |
| 2 | 3 TBSP - ROCK SALT |
| 3 | 2 TSP - BLACK PEPPER |
| 4 | 2 TSP - CHIPOTLE & ROASTED GARLIC RUB |
| 5 | PRIMEBEEF MEAT THERMOMETER |
Steps
| 1 | Preheat oven to 450°F. |
| 2 | In a bowl, mix your salt, pepper and chipotle rub until well combined. Generously massage the rub all over your slab of Striploin. |
| 3 | Place meat, fat side up, on rack in roasting pan and roast in the oven for 15 minutes. |
| 4 | Reduce oven temperature to 350°F. Roast meat until instant-read thermometer inserted into thickest part of meat registers 130°F for medium rare doneness, about 30 minutes. |
| 5 | Remove from the oven and let rest for 30 more minutes before serving. |
