CHINESE CHAR SUI GRILLED LAMB CHOPS

Ingredients
1 | 8 PIECES - LAMB SHOULDER/LOIN CHOPS, WELL TRIMMED |
2 | 3 TBSP - HOISIN SAUCE |
3 | 3 TBSP - SOY SAUCE |
4 | 2 TBSP - CHINESE RICE WINE OR DRY SHERRY |
5 | 1 TBSP - SUGAR |
6 | 1 TSP - FIVE-SPICE POWDER |
7 | 1/2 TSP - SALT |
8 | 2 TBSP - HONEY |
9 | 1 TBSP - WATER |
Steps
1 | Combine hoisin, soy sauce, rice wine, sugar, five spice and salt in small bowl. |
2 | Transfer to large resealable plastic bag. |
3 | Add lamb, seal bag, and turn around to coat. |
4 | Marinate the lamb in the refrigerator at least 4 hours or overnight for the meat to absorb the flavors of the marinade.The longer it sits, the richer the flavor will be! |
5 | Prepare barbecue at medium-high heat. Drain the lamb, but leave some marinade clinging to the meat. Grill lamb until slightly charred and cooked to desired doneness, about 2 and a half minutes per side for medium-rare, before transferring to platter. |
6 | Stir honey and 1 tablespoon of water in a small skillet over medium heat until warm. Brush that good stuff over the lamb chops before serving. |
