ROASTED LAMB LEG

The herbs in this recipe flavor the meat intensely. Perfect for those skeptical about trying lamb for the first time.

Ingredients
1 3 KG - BONELESS LEG OF LAMB
2 OR BONE IN LEG OF LAMB
3 40 G - FRESH PARSLEY
4 4 PIECES - CORIANDER LEAVES
5 5 G - ROSEMARY
6 DIJON MUSTARD
7 TO TASTE - SALT AND PEPPER
Steps
1 In a food processor, mix in the herbs and spices and grind until fine.
2 Preheat your oven to 375°F . Season well your Lamb leg with salt and pepper.
3 Heat up your grill pan good enough for searing. Brown you lamb leg slab on all sides.
4 Set aside the lamb leg slab. Once it has been cooled, brush the mustard on the slab.
5 The mustard would serve as glue to your coarsely grinded fresh herbs.
6 Cook your slab in the pre heated oven for a good 45 mins.
7 Serve with mint jelly and sundried couscous.
