LAMB PILAF

A fragrant, filling, and comforting dish. If you enjoy eating fried rice and have little to no experience making risotto, this recipe will be fun for you.

Ingredients
1 4 CUPS - JASMINE/BASMATI RICE
2 1KG - LAMB CUT UPS/CUBES
3 1/2 CUP - OLIVE OIL
4 8 CUPS - WATER
5 2 PCS - CHOPPED TOMATOES(MEDIUM)
6 4 CLOVES - GARLIC(MINCED TO PASTE)
7 2 TSP - GINGER(MINCED)
8 2 PCS - WHITE ONIONS(CHOPPED)
9 2 PCS - BAY LEAVES
10 1 TBSP - CUMIN SEEDS
11 4 PCS - CARDAMOM PODS
12 1 TSP - BLACK PEPPERCORNS (WHOLE)
13 1 PC - CINAMMON BARK
14 1 CUP - YOGURT
15 1/4 CUP - DILL
16 1/2 CUP - PINE NUTS (OPTIONAL)
17 1/2 CUP - CHOPPED CILANTRO (OPTIONAL)
18 1/2 CUP - APRICOTS (OPTIONAL)
Steps
1 Boil your meat in around 6 cups of water, let it simmer for 10 to 15 minutes until the lamb is half cooked. This will be your stock. Keep the water.
2 Next is your Malasa base. Preheat your pan and pour in half a cup of oil.
3 Throw in your spices and aromatics--the bay leaves, cumin seeds, cardamom pods, peppercorns, and the cinnamon stick broken in halves. Let that cook for a bit until the aromas start to release, and then add your chopped onions. Keep stirring so that nothing burns at the bottom.
4 Cook until the onions are deep brown and caramelized. Once that happens, add some water to keep your onions and aromatics from overcooking.
5 Add your chopped tomatoes, minced garlic and minced ginger. Keep the heat on low until the garlic is cooked. Add salt to taste.
6 Add your lamb to the mix and stir until the lamb forms a golden brown crust! Keep stirring so nothing burns then add one cup of water to control the heat and let the flavors reduce.
7 Add your stock(the water you cooked your lamb in). Bring the whole mixture to a boil.
8 Add your rice and let it cook for 15 to 20 minutes, or until the rice looks cooked and the liquid looks reduced. You can optionally put your rice and lamb pilaf in the oven, and let it cook for 20 minutes.
9 Plate up your lamb pilaf rice and serve!
Tips
1 We suggest you garnish with some toasted pine nuts, dried apricots, and/or cilantro.
