CHIPOTLE STRIPLOIN ROAST

The chipotle rub is where the magic happens.

Ingredients
1 3 KG - AGED ANGUS STRIPLOIN SLAB, CHOICE GRADE
2 3 TBSP - ROCK SALT
3 2 TSP - BLACK PEPPER
4 2 TSP - CHIPOTLE & ROASTED GARLIC RUB
5 PRIMEBEEF MEAT THERMOMETER
Steps
1 Preheat oven to 450°F.
2 In a bowl, mix your salt, pepper and chipotle rub until well combined. Generously massage the rub all over your slab of Striploin.
3 Place meat, fat side up, on rack in roasting pan and roast in the oven for 15 minutes.
4 Reduce oven temperature to 350°F. Roast meat until instant-read thermometer inserted into thickest part of meat registers 130°F for medium rare doneness, about 30 minutes.
5 Remove from the oven and let rest for 30 more minutes before serving.
