CHINESE CHAR SUI GRILLED LAMB CHOPS

Ingredients
1 8 PIECES - LAMB SHOULDER/LOIN CHOPS, WELL TRIMMED
2 3 TBSP - HOISIN SAUCE
3 3 TBSP - SOY SAUCE
4 2 TBSP - CHINESE RICE WINE OR DRY SHERRY
5 1 TBSP - SUGAR
6 1 TSP - FIVE-SPICE POWDER
7 1/2 TSP - SALT
8 2 TBSP - HONEY
9 1 TBSP - WATER
Steps
1 Combine hoisin, soy sauce, rice wine, sugar, five spice and salt in small bowl.
2 Transfer to large resealable plastic bag.
3 Add lamb, seal bag, and turn around to coat.
4 Marinate the lamb in the refrigerator at least 4 hours or overnight for the meat to absorb the flavors of the marinade.The longer it sits, the richer the flavor will be!
5 Prepare barbecue at medium-high heat. Drain the lamb, but leave some marinade clinging to the meat. Grill lamb until slightly charred and cooked to desired doneness, about 2 and a half minutes per side for medium-rare, before transferring to platter.
6 Stir honey and 1 tablespoon of water in a small skillet over medium heat until warm. Brush that good stuff over the lamb chops before serving.
Tips
1 Want an even richer flavor? Leave it marinated for 24 hours!
